Uraga Siko

This lot comes from a washing station named Siko. Located in the Siko village of Uraga, Guji, this washing station produces quality cup profiles and high-scoring lots. The station buys cherries from around 500 neighbouring farmers, whose farms sit at high altitudes of 2100 – 2250 masl. The land’s rich, fertile, red soils, combined with constant sunlight exposure, allow the well-trained farmers to grow high quality coffee we keep coming back for.

Process

The cherries are dried in a relatively thin layer at about 3-4 cm the first days. They will build up the layers to 6- 10 cm after a few days. The coffees are moved frequently and they will be covered during the hottest hours of the day to protect the cherries from intense sunlight, then again at night to protect against humidity. This will also help improve quality as the coffee is rested and the drying more homogeneous. Drying naturals at these altitudes can take up to 21 days.

At this point, skin, and mucilage, now deteriorated by fermentation and dried out, are removed mechanically. Then the coffees will be packed in GrainPro bags and stored in the local warehouse onsite, separated by process and grade. This process helps condition the coffee and achieve a more uniform humidity. They will normally be stored 1-2 months before they are moved.

Variety

The Welicho variety is a typical coffee variety that is found in the highlands of Ethiopia. Amongst the thousands of unidentified Ethiopian varieties, Welicho has made a name for itself. Welicho is also known as Wolisho.

Natural process

Natural sundried, also called “natural process” or “dry process,” means drying coffee cherries whole without the intervention of water or machines to remove any of the fruit. Prior to drying, the cherries are picked, floated in water, and sorted to remove any under-ripe or overripe fruit.
