Extended Cold Fermentation

"Las Garzas" is a naturally processed coffee. This means that the coffee cherries are dried with the fruit intact, which often imparts more intense fruity and sweet notes to the resulting cup. In this natural process, the cherries are fermented for 38 hours and then dried for eight days on raised African beds under a canopy.

Castillo, bred in Colombia, is a resilient cross between Caturra and Timor, known for its high yields and balanced cup profile, which can feature notes of caramel, chocolate, nuts, and fruit, although its quality is debated in the specialty coffee world.


Natural

Natural sun-drying, also called “dry process,” means drying the coffee fruit whole without the intervention of water or machines to remove any of the fruit. Before drying, the cherries are picked, floated in water, and sorted to remove any under-ripe or overripe fruit.
