60% Strawberry Colombia from El Vergel.The process starts with hand sorting to select only ripe cherries and remove impurities like leaves or stones. The cherries then undergo a 24-hour pre-fermentation in plastic bags, followed by 24 hours of fermentation in cherry. After depulping, the beans are co-fermented anaerobically for 5 days with their mucilage, combined with yeast and strawberries, boosting the honey process with rich fruit flavor. Finally, the coffee is dried mechanically for 10 days to ensure even moisture levels, then stabilized for 5 days in GrainPro bags. The result is a vibrant cup with notes of strawberry, milk chocolate, and malic acid, showcasing Colombia’s diverse terroirs and innovative processing methods
40% Natural Brazil Selective mechanical harvesting is usually carried out when the tree has 40-60% ripe coffee, 5% green, 10% unripe and the rest is dried. Each coffee has its own unique characteristics, so before placing an order for a specific batch, a sample is taken, processed and roasted to check the expected taste. Sorting is carried out in a specially modified wet mill, where it is first sorted by density, removing excess cuttings, and then the dry and natural beans are sorted into ripe, underripe and green.

About variety
Colombia – Castillo – Created by Colombia's National Coffee Research Center (Cenicafé), Castillo is a high-yielding variety famous for its robust resistance to coffee leaf rust and its ability to maintain high-quality specialty profiles at altitude.
Brazil – Mundo Novo – A strong and productive plant with quality fruit, but susceptible to major diseases. It is grown extensively in South America, but rarely in Central America and the Caribbean.
Natural
Natural sundried, also called “natural process” or “dry process,” means drying coffee cherries whole without the intervention of water or machines to remove any of the fruit. Prior to drying, the cherries are picked, floated in water, and sorted to remove any under-ripe or overripe fruit.
