Our agricultural journey began in 1995, and in 2010 we started cultivating coffee at El Vergel Estate in Tolima. By 2015, we had successfully harvested our first varietals.In 2017, after facing challenges in the local market, Martha, Shady, and Elias set out to find innovative ways to add value to their coffees and close the gap between producers and roasters.Forest Coffee was founded in 2019 with a vision to unlock the true potential of Colombian coffee through innovation in processing, education, and sustainability. Our mission is to connect coffee growers directly with international markets, ensuring fair pricing and full transparency. Today, in 2025, Forest Coffee has grown into a thriving network of 250 coffee-growing families, four major projects across Colombia, a dedicated team of 25+, and a global community of partners and roasters. Our story is a testament to how innovation and community can transform the coffee industry for the better.


Process
El Vergel Estate (Tolima, Colombia) coffee starts with Red and Yellow Caturra cherries. The beans undergo a 48–60 hour anaerobic fermentation, followed by initial sun drying on raised beds to $30\%$ moisture. They are then mechanically dried below $45^\circ\text{C}$ to $16-18\%$ moisture, stalled for flavor intensity, and finally dried mechanically to optimal moisture. After 45 days of stabilization in GrainPro bags, this meticulous natural anaerobic process yields a complex flavor with notes of Passion fruit, cacao, coconut, strawberry, honey, and citrus/orange. Sugarcane Decaffeination (EA) uses ethyl acetate (EA), a compound naturally derived from Colombian sugar cane. Moistened beans are circulated with EA, which bonds with and extracts the caffeine while preserving most flavor. The process finishes with steaming to remove any EA residue, resulting in rich, decaffeinated coffee.

Caturra is a high-yielding, dwarf natural mutation of the Bourbon coffee variety, prized for its balanced, sweet, and citrusy cup profile, though it is susceptible to pests.
Natural
Natural sundried, also called “natural process” or “dry process,” means drying coffee cherries whole without the intervention of water or machines to remove any of the fruit. Prior to drying, the cherries are picked, floated in water, and sorted to remove any under-ripe or overripe fruit.
