2025 edition of our special flavour modulation coffee. Coffee was resting in wooden barrel used to age rum with subtle cinnamon undernotes. This translates to winter tastes perfectly made for that Christmas time.
50% Pink bourbon from Colombia
Forest Coffee sources its fresh crops from Tolima, Huila, and Caldas, processing them at El Vergel Estate. Founded in 2019 by Martha, Shady, and Elias, we aimed to close the gap between Colombian coffee growers and international roasters, ensuring fair pricing and full transparency. Our innovative process for this coffee involves co-fermenting Pink Borbon cherries with coconut and coconut water for 144 hours, followed by 30 days of sun-drying with lemon peel for a unique finish of citrus, coconut, and tropical fruits.


50% Brazil from Minas Gerais
Founded in 2000 in Minas Gerais, Sancoffee is a B-Corp certified cooperative that has become a key driver of specialty coffee in the Campo das Vertentes region. The coop is deeply committed to social and environmental sustainability, transparency, and long-term customer relationships. Their unique processing begins with machine harvesting and immediately forwarding cherries to paved drying patios, bypassing the wet mill to prevent fermented tastes. Beans are thinly spread for sun exposure, then finished in mechanical dryers at 35-40 degrees celsius for consistent moisture, resulting in a solid chocolaty and nutty flavor.

Flavor modulation
Flavor modulation is an original method of our roastery. It is post-process of dried green beans – an improved process of maturing the green beans in a barrel after rum. Our method ensures a more even distribution of the taste of the selected alcohol in the coffee and more pronounced character.
How to prepare this coffee? We tried all the preparation methods, but we liked it the most when using it in a milk drink (cappuccino) and it is also excellent for preparing cold brew.
Natural
Natural sundried, also called “natural process” or “dry process,” means drying coffee cherries whole without the intervention of water or machines to remove any of the fruit. Prior to drying, the cherries are picked, floated in water, and sorted to remove any under-ripe or overripe fruit.
