Farm
Nogales is a family-run farm—or rather, an enterprise—that combines tradition with innovation. You will find it in the settlement of El Diamante, just a short distance from the small town of Bruselas in the southern part of the Huila department. Members of the Hernández family trace the farm’s founding back to around 1940. Its tradition and focus on growing the finest coffee were later developed by Mr. Ricaurte Hernández. Following his death, the future of the farm was briefly uncertain. However, in 2016, under the leadership of Oscar Hernández, Ricaurte's son, the farm began to flourish, and today it serves as a model for farmers throughout the region. At Nogales, they rely on innovation and recognize that the coffee world is constantly evolving, with scientific integration becoming increasingly essential. That is why Oscar relies on the expertise of a biochemist, an agricultural engineer, and a microbiologist, as well as an experienced accountant; he himself is a highly capable manager. Passion for what they do is something no one lacks—they pull together, and whenever differing opinions arise, they view them as a asset.


Processing Methodology: Elixir
Selective Harvesting & Cleaning: Hand-picked at peak ripeness. Cleaned in room-temperature water, mechanically sorted for density, and skimmed for floaters/defects.
Thermal Fusion (Short Protocol): Whole cherries are flash-submerged in hot water at 80°C for 20 seconds. This brief pasteurization step sanitizes the cherry skin and releases extra sugars to fuel subsequent fermentation.
Depulping: Outer skin is removed while retaining the mucilage on the bean.
Controlled Fermentation: Beans are placed in fermentation tanks inside a temperature-controlled room to ferment in their own mucilage for 4 to 5 days. The cool, stable environment allows for a slow, controlled build-up of complex flavor and aromatic compounds.
Washing: Mucilage is thoroughly washed off prior to drying.
Sun Drying: Naturally sun-dried on traditional raised beds for 2 to 3 weeks, hand-turned multiple times daily for uniform moisture reduction.
Hulling & Storage: Hulled on-site, packed in GrainPro bags, and stored in a climate-controlled warehouse held at 16–19°C and 30–35% RH.

About variety
Orange Bourbon is a rare natural mutation of the Bourbon family, prized for its distinctive orange cherries, vibrant citrus acidity, and high inherent sweetness. When grown at high altitudes like Finca Los Nogales' Yarumo lot, it develops a delicate, complex Cupping profile featuring notes of lavender, yellow fruits, and lemongrass.
Mosto
Mosto is the living, flavor-dense juice produced during coffee cherry fermentation. Producers reuse it to guide flavor development in fermentation lots or to infuse natural fruit character into specialty decaf coffees.
