60% Natural Colombia

Hacienda Venecia is a working coffee farm with 100 years of tradition. In 2009,they opened doors to visitors to share extensive knowledge of coffee culture including cultivation, processing, exporting, roasting and marketing of coffee. It is located in the country side near the Andean Central Range, close to the Los Nevados National Park.

40% Natural Brazil

Selective mechanical picking occurs typically with 40-60% ripe coffee on the tree, with 5% green, 10% underripe, and the rest tree dried. Each brings its own unique characteristics to a coffee, so a sample is picked, processed and roasted to check taste is as expected before the order is given to pick the specific lot. Sorting is done on a specially adapted wet mill, first with density sorting that removes overripes, then with the drier and natural beans being sorted from the ripes, underripes and greens.

Varieties

Colombia – Castillo – is mainly found in Colombia and has high yields. It is popular amongst Colombian producers because of its rust-resistant character.

Brazil – Mixed variety – Each finished lot is tasted for exact flavour profiles and blended for required taste profile. Once complete, beans are then size, density, and triple colour sorted before packing in to poly bags ready for shipping.

Natural process

Natural sundried, also called “natural process” or “dry process,” means drying coffee cherries whole without the intervention of water or machines to remove any of the fruit. Prior to drying, the cherries are picked, floated in water, and sorted to remove any under-ripe or overripe fruit.
